Zucchini Fritti

I absolutely love Zucchini Fritti (fried courgette) and they are so easy to do gluten free!

I enjoy these as a side to various meals but I would have to say my favourites would be combined with fish or turkey. It really compliments a light flavour!

Ingredients:

  1. Courgette – 1 courgette to 2 people.

  2. A small bowl of gluten free plain four.

  3. A small bowl with 1 beaten egg per person.

  4. Olive oil.

Method:

  1. Prep a frying pan covered with olive oil. I would say 2-3 teaspoons depending on how many you are cooking for. It needs a fair bit of oil to crisp up nice.

  2. Cut your courgette into small rounds. Of medium thickness. Don’t go too thick otherwise it won’t fry properly.

  3. Dip the courgette in flour. Cover fully.

  4. Dip the courgette in eggs. Cover fully.

  5. Fry these for 5 mins on each side until the egg/flour mixture has crisped up into a beautiful golden brown.
