Green Risotto

Ingredients:


  • Garlic - 2 segments.

  • 1 onion

  • Risotto Rice - a small handful per person

  • Stock - 1 cube - GF.

  • Mascarpone

  • 1 Courgette

  • a small bunch of asparagus

  • Broccoli - small handful.

  • Basil


Method:


  1. Fry garlic and onion until soft.

  2. Add risotto rice and a little stock. Keep adding stock until soft - little by little.

  3. Add mascarpone.

  4. Add finely chopped courgette and asparagus mix until soft.

  5. Keep adding stock until soft.

  6. In a separate saucepan steam broccoli to add to top, add parmesan and a leaf of basil
