Tomato Risotto

Serves 4
Ingredients:
250g arborio rice
1 vegetable stock cube mixed with boiling water
1 can of peeled tomatoes
1 large onion
3 cloves of garlic
mixed santini tomatoes
A Buffalo mozzarella ball
A handful of Basil
Method:
Finely chop onion and garlic and fry until soft.
Soak the peeled tomatoes and juice into the onions and garlic.
Add arborio rice and a pinch of basil and stir into the base.
Bit by bit add the vegetable stock until al dente.
Add the whole santini tomatoes.
Add chunks of the mozzarella at the end - I tear this up and spread it evenly. Cook for a max of 5 mins more.
