Pasta-less Minestrone

Serves 4
Ingredients:
1 large onion
1 segment of garlic
2 carrot
2 celery sticks
A squeeze of tomato paste
1 can of chopped tomatoes
1 can of borlotti beans
A handful of cabbage
Method:
Add finely chopped onion, carrot, celery and garlic and fry until soft.
Add a squeeze of tomato paste and mix.
Add chopped tomatoes and fill half the can with water. Add the water into the mix too.
Add the borlotti beans and cabbage.
I then finished this off in a slow cooker (6 hours on medium) and served with Warburtons GF bread.
