Vegetable and bean Chilli

This is so filling and at the same time packed with greatness! I think this meal is perfect with brown rice and avocado when I come back from dance or a run. Re-charges you right up!

Ingredients:

  1. 1 red onion.

  2. 3 segments of garlic.

  3. 1 carrot.

  4. 1 courgette.

  5. 3 chestnut mushrooms.

  6. 1 red pepper.

  7. Half a tube of tomato puree.

  8. 1 can of chopped tomatoes.

  9. 1 can of kidney beans.

  10. 1 can of baked beans.

  11. 1 small tin of sweetcorn.

  12. A sprinkle of chilli flakes.

  13. Brown Rice

  14. Avocado.

Method:

  1. Finely chop the onion, garlic and carrots and cook them in olive oil, leaving them to sweat until soft.

  2. Add the courgette, mushrooms and pepper (finely chopped). Fry until soft.

  3. Cover the veg in tomato puree and then sprinkle with chilli flakes.

  4. Add the chopped tomatoes, beans and sweetcorn and stir in until fully mixed.

  5. Sprinkle again with a little chilli flakes.

  6. Leave to simmer for 20 mins. Serve it up with brown rice and a couple of slices of avocado.
