Cute little chocolate souffle! Easy to make, delicious chocolate treat! No flour! No nuts! I make this one when I need a pudding my sister and I can eat. She is allergic to nuts and I am allergic to wheat…what a nightmare!

Ingredients:

  1. 250g of good quality chocolate for cooking – read the back carefully for wheat (and nuts if you are catering for that too).

  2. 125g butter

  3. 4 egg yolks

  4. 50g white sugar

  5. 4 egg whites

  6. Vanilla Icecream

Method:

  1. Pre-heat the oven to 180 degrees.

  2. Melt the chocolate and butter until it becomes a smooth mixture.

  3. In a second bowl whisk the egg yolks with half the sugar until creamy.

  4. In another bowl whisk the egg whites with half the sugar.

  5. Grease up the ramekin dishes. This makes around 6 souffles so grease up 6!

  6. Fold the egg yolk mixture into the chocolate and butter mix then add the egg whites in.

  7. Divide the mixtures between all your dishes.

  8. Bake for approximately 10-20 minutes. Keep an eye on them – you want them to rise at least 2 inches over the top of the ramekin. The middle will still be wet but not too gooey.

  9. Serve with vanilla icecream!!
