Sweet Potato Fish Pie

I absolutely love this recipe….which I am not going to lie to you, was kind of a bit of an experiment/chuck it all in kind of night recipe. I absolutely love that I only had sweet potato in the cupboard…gives the fish pie a bit of bite …. delicately mixed with the parsley covered cheese. Melt in mouth.

Serves about 4.

Ingredients:

  1. 3 good size sweet potatoes.

  2. 300ml milk

  3. 25g butter

  4. 1 red onion

  5. 1 brocolli (a little strange but works)

  6. 1 cauiflower (I know…but trust me)

  7. A handful of petis pois

  8. A handful of grated cheese (cheddar is probably best)

  9. 1 pack of fish pie mix (salmon,cod and haddock – cheap as chips at Aldi)

  10. A sprinkling of parsley

Method:

  1. Peel the potatoes and chop them into small chunks. Boil these until cooked with the broccoli and cauliflower.

  2. Drain just the potatoes and mash lightly using a masher. Keep a few lumps….always tastes better that way. Place these into an oven proof tray (I have recently found one in Ikea that doubles as a lunch box – fab idea!).

  3. Fry the red onion until soft in a small pan.

  4. Place the fish selection into a larger pan and cover with an inch of water until its lightly covered and leave it to simmer for 5/6 mins – this makes a lovely stock as well as cooks the fish.

  5. Once it has been cooking for 6 mins, add the onion, broccoli and cauliflower (which have been previously cooked). Add the peas very last minute.

  6. Drain these and leave just a cup of the stock.

  7. Mix the fish and vegetables into the mashed potato, spooning in a little of the stock.

  8. Add the parsley (I do a little in the mixture and then sprinkle the rest on top with a big handful of cheese).

  9. Add the cheese, Go on make it a thick layer!

  10. Pop under the grill to crisp up to perfection – watch it wont take long!
