Stelline Zuppa di pollo e vedure

A simple and easy chicken and vegetable stelline.
Stelline is the cutest little star shaped Italian pasta! My favourite brand is Barilla for the authentic Italian taste however this is hard to come by in England (although Waitrose do a great stelline pasta in their free from section). This pasta is ideal for soup or more of a minestrone dish!
I served this up with a mixture of chicken and vegetables and my boyfriend couldn’t even tell it was gluten free!
Ingredients:
A handful of steamed broccoli heads and cauliflower heads broken into small pieces.
2 cups of chicken stock – double check this is gluten/wheat free!
1 chicken breast chopped into small chunks.
1 cup of stelline pasta.
Fry the chicken chunks in sunflower oil lightly until fully cooked.
Steam the broccoli and cauliflower heads separately whilst your chicken is cooking.
Add chicken stock to the chicken and bring to boil.
Reduce the heat and stir in the stelline. Cook untill al dente.
Stir occasionally. Add the steamed broccoli and cauliflower heads, broken, into the mixture at the last minute.
