Quick and Easy Chicken Fajitas

So this is an easy peasy lemon squeezie recipe – it requires very little effort but tastes so good! If I come in from a hard day at work and just want a quick meal – this is my go to.

Method:

  1. Cut up some chicken with scissors into small chunks and fry in a small amount of olive oil, paprika and a pinch of chilli.

  2. While the chicken is cooking, slice some peppers, red onions and mushrooms into thin strips and fry them up until nice and soft. I add some sweetcorn at the last minute to add a bit of extra fibre.

  3. Once the chicken is cooked and white through serve up with gluten free wraps, cheese and sour cream.

Three simple steps! Wow. I recommend the B Free brand for the wraps – high in fibre but they taste really good! If not my second best wrap brand at the moment is Warburtons’ GF wraps.
