Mini Pepper Pizzas

These are the easiest thing to make and you can shake it up with whatever ingredients you fancy. I decided to have chorizo and mushroom but feel free to be experimental!

Ingredients:

  1. Peppers of all colours. I use sweet peppers as they taste nicer.

  2. Tomato puree.

  3. Mushrooms – 2/3.

  4. Shredded mozarella.

  5. Chorizo – small chopped slices.

Method:

  1. Slice the peppers in half and take out the seeds.

  2. Spread the puree inside – quite a thick layer is needed.

  3. Stuff in the chorizo squares and mushroom squares – chop these very small.

  4. Sprinkle with the mozzarella.

  5. Cook in the oven on 180 for about 10 mins.
