Asparagus Parcels

These are easy peasy but taste amazing!!! All you have to do is steal my pesto recipe from this week (you can find it on my blog) and wrap away with the parma ham.

Here you go…

Ingredients:

  1. You will need 3 spears of asparagus per parcel and I like to do 2 parcels per person so work out that maths wise for the amount you are cooking for: e.g. 2 = 12 spears.

  2. Parma Ham. 1 strip per parcel e.g. 2 people = 4.

  3. Mozzarella cut into chunks. 1 ball should make around 5 good chunks so for 2 people you will only need one mozzarella ball.

  4. Pesto – see my other blog.

Method:

  1. Place 3 spears of asparagus together.

  2. Place a small chunk of mozzarella on top.

  3. Place a dollop of the homemade pesto on top of the mozzarella.

  4. Wrap the middle of the parcel with parma ham.

  5. Pop in the oven for 15 mins to crisp up and cook the spears.

  6. Serve.
