Free and Easy Foods kindly gifted me a few of their items that I had been goggling on Insta for months! I could not wait to try them!! Could not wait to suss out the Free From Awards 2017 winners!!!

Coffee cake mixture, sponge cake mixture and a tikka paste! They know me so well…love a good cake and curry! Not together…although no judging.

First impressions, absolutely love the packaging! It’s fab. So bright and cheery!

So let’s get cracking, how easy are these to bake? And how will they hold up to the curse of gluten free crumbling?

I was a bit sceptical at first, thinking I had never heard of coconut blossom sugar and wondering quite how it might work in a cake, perhaps a secret ingredient. It would appear that it is a healthy alternative to sugar made from tapping the flowers bud stems of a coconut tree (who knew?!) (and I think once the cakes were made, it made them lighter and fluffy than usual)! No need to be sceptical.

The cakes were very easy to make with very little ingredients…don’t you just hate those companies that give you a mix and you have to add 10000 ingredients. I tried just gluten free but these were very easy to also make dairy free!

So what did I actually need to make these, well just an egg, some milk and vegetable/sunflower oil. Who doesn’t have these in their kitchen anyway?!!

Simply, preheat the oven, empty the contents into a bowl, add the oil, milk and eggs and whisk until combined for 5 mins in total! Yep, that simple! So I made coffee cupcakes with chocolate buttons on top and a sponge with some fresh strawberry jam on top.

They tasted amazing! Yep, got stuck into them pretty much as soon as they called down. The sponge was so light and fluffy and only a smidge crumbly (if smidge is a word). Absolutely loved the texture of them! My fiance absolutely hates coffee cake but he tucked into these cupcakes straight away too (I personally would have liked a little more coffee in them, but they suited him fine).

Would definitely purchase these again – the best boxed cake mixtures I have tasted to date, and so easy!

Next up I tried the tikka paste and followed their tips on the back to a T.

WHAT. A. LOVELY. DINNER we had so tasty. The paste has so much flavour to offer with ginger, coriander, tamarind and paprika. The idea of marinading it overnight seemed extreme to me so I just did it for 1 hour and the taste was amazing, imagine soaking it overnight! I used chicken thighs, spinach, broccoli, tomato and cauliflower and placed the natural yoghurt on top as suggested. A lovely meal, so flavoursome.

I can’t wait to try out some more of their products, I have my eyes on the cheese sauce next! It’s also perfect because my sister is nut free so I can cook for her!
